A much-loved mother and grandmother, Victoria Davis Coffman, 80, of Jacksonville, FL, passed away on Sunday, February 22, 2026. Victoria was surrounded by her children and leaves behind a legacy of warmth and kindness that will be deeply missed.

Victoria (Vickie) was born on May 8, 1945—VE-Day—in rural Greene County, Tennessee. She grew up in beautiful Fountain City near Knoxville, Tennessee, where she was raised alongside her aunts, uncles, and cousins. After graduating from Central High School and attending East Tennessee State for two years, she earned her Bachelor of Science degree in Education as a proud Volunteer from the University of Tennessee. Following graduation, she moved to Atlanta with her best friends from college to begin a career teaching second grade.

Vickie’s life took an adventurous turn during a trip to Okinawa, Japan, with her aunt. While visiting her cousin at his Air Force base, she met a fellow squadron member, Bob Coffman. Their meeting led to a short courtship and a marriage on October 3, 1970, at First Baptist Church of Knoxville. Vickie was an Air Force wife for several years after getting married and had her first child, Scott. With Bob taking to the skies as an airline pilot after his military career, the family settled into life in Florida. There, Vickie lovingly raised their family, including daughter Amy, in the communities of Longwood and Winter Park.

Vickie cherished the years spent raising her children and especially enjoyed boating along the Florida coasts with her family. Vickie was a fixture in her children’s lives as a Girl Scout leader, cheerleading mom, and booster club supporter. She took pride in creating a warm and welcoming home that became an inviting hangout for her children's friends. Once her children were grown, she went back to the classroom to teach part time.

Vickie was the sweetest, gentlest, and most giving mother and grandmother who was grateful for the many blessings in her life. She was a gifted cook whose kitchen was the center of the home and known for turning any meal into a flavorful celebration. Her beloved dogs—Shawn, Suzy, Lady, Maddie, and Annie Rose—were precious members of her life. Whether she was birdwatching, gardening, reading the latest bestseller book, or cherishing time with grandchildren, Vickie found joy in the world around her.

Vickie was the loving daughter of the late Gwennie Williams Davis and Harold Hines Davis of Knoxville. She was preceded in death by her cherished husband of 51 years, Bob Coffman. She is survived by her children, Amy (Robert) Wright of Ponte Vedra Beach, FL, and Scott Coffman of Leesburg, VA, as well as her grandchildren, Emily Wright, William Wright, and Aidan Coffman.

A family service at Greenwood Cemetery in Knoxville, TN, will be planned at a later date.
